Identify deficiencies in raw materials;
Identify the product by proper name at sight and trim all loins;
Label/identify sub primal cuts after trimming to ensure product is ready for next step in processing;
Knowledge of basic cuts and trim that prep table is responsible for producing (stew, roasts, PTRs, etc.);
Work in refrigerated processing and warehouse areas; heavy lifting; handle processing and material handling equipment safely
