A prestigious luxury resort is seeking an accomplished Assistant Director of Food & Beverage to support the leadership and daily operations of a sophisticated, multi-outlet Food & Beverage operation. This role is ideal for a polished hospitality professional who combines exceptional luxury service standards with strong operational, financial, and team leadership skills.
The Assistant Director of F&B will serve as a key member of the resort's leadership team, partnering closely with the Director of Food & Beverage, culinary leadership, hotel operations, and other department heads to deliver an exceptional guest experience across restaurants, bars, banquets, in-room dining, pool/beach operations, and other resort outlets.
The successful candidate will have a strong understanding of luxury resort operations, Forbes Five-Star and/or AAA Five Diamond service standards, financial performance, talent development, and high-touch guest service.
Key Responsibilities Food & Beverage Operations- Assist in overseeing all daily Food & Beverage operations across multiple resort outlets and venues.
- Maintain consistently elevated service, presentation, and operational standards.
- Ensure each outlet delivers a seamless and memorable guest experience.
- Conduct regular operational walkthroughs and service observations.
- Partner with outlet leaders to improve efficiency, quality, guest satisfaction, and profitability.
- Support restaurant, bar, banquet, pool, beach, and in-room dining operations as needed.
- Ensure compliance with resort standards, policies, SOPs, health regulations, and responsible alcohol-service requirements.
- Champion a culture of genuine, personalized hospitality.
- Maintain a highly visible leadership presence throughout the operation.
- Personally engage with VIPs, repeat guests, high-profile clientele, and special-event guests.
- Resolve guest concerns with discretion, urgency, and sound judgment.
- Monitor guest feedback and identify opportunities to elevate service and product quality.
- Support the resort's commitment to Forbes, AAA, and other luxury service standards.
- Lead, coach, and develop F&B managers and supervisors.
- Establish clear expectations for service excellence, professionalism, and accountability.
- Assist with recruiting, onboarding, training, performance management, and succession planning.
- Develop future hospitality leaders through consistent coaching and mentorship.
- Foster a positive, collaborative, and service-driven culture.
- Promote cross-training and teamwork among F&B outlets and hotel departments.
- Assist with achieving annual Food & Beverage revenue and profitability objectives.
- Monitor food, beverage, labor, and operating expenses.
- Review forecasts, budgets, P&Ls, labor productivity, and departmental performance.
- Identify opportunities to increase revenue, improve margins, and control costs without compromising the guest experience.
- Partner with Culinary, Finance, and Revenue leadership on financial planning and business strategy.
- Analyze outlet performance and develop action plans based on business trends and results.
- Support inventory management, purchasing, menu pricing, and cost-control initiatives.
- Provide leadership support across fine dining, casual dining, lounges, banquets, weddings, private events, and resort programming.
- Partner with Sales & Catering to ensure successful execution of high-profile events.
- Review BEOs and event details to ensure operational readiness.
- Assist with menu planning, service standards, staffing, and event execution.
- Ensure seamless communication between Culinary, Banquets, Events, and Front Office teams.
- Maintain an uncompromising focus on food quality, beverage presentation, service standards, cleanliness, and overall outlet appearance.
- Conduct regular inspections and follow-up on corrective actions.
- Ensure all outlets consistently meet or exceed established resort standards.
- Participate in internal quality assurance programs and luxury-service assessments.
- Minimum 5–7 years of progressive Food & Beverage leadership experience in a luxury hotel, resort, private club, or high-end restaurant environment.
- Previous experience as an Assistant Director of F&B, F&B Director, F&B Manager, Restaurant Director, or comparable senior leadership role
