Prep Person sets the restaurant up for success by prepping the appropriate amount of prepped food for the day.;
Complete 2/3 of prep in the morning and the remaining 1/3 in the afternoon.;
Use updated E-Production or Prep Charts and the Daily Produce Prep Chart Poster (see Appendix).;
Stock the kitchen with frozen, refrigerated and dry stock prior to changeover and for next-day use.;
Push and pull of sandwiches or hash browns or fries to create speed, capacity, and workspace.
