Our company is growing with new stores coming to Long Island, and we’re excited to expand our Melville flagship store! We’re seeking a Pasta/Mozzarella Assistant Manager for our Pasta & Mozzarella Department. This hands‑on role focuses on crafting fresh pasta and mozzarella using Uncle Giuseppes authentic Italian recipes while supporting the overall operations of the department.

• Manage the staff within the Pasta/Mozzarella Department, working directly with the Department Manager/Supervisor.
• Make fresh mozzarella from curd and pasta from scratch, engaging all senses to maintain and elevate product quality.
• Record daily ingredient weights, batch sizes, and amounts transferred to other outlets.
• Adjust time cycles and ingredient quantities as needed to ensure consistent product quality.
• Handle, weigh, package, and label pasta and mozzarella offerings with care and attention to detail.
• Stock display refrigerators accurately and efficiently.
• Assist the Production Manager with hiring, training, scheduling, and overseeing daily operations.
• Provide guest service and educate customers about our pasta and mozzarella‑making process.
• Maintain a clean and safe workstation, following all food safety and sanitation practices.
• Ensure department supplies are stocked and used properly.
• Perform other duties as assigned.

• High school diploma or equivalent required.
• 3+ years of hands‑on experience in pasta and/or mozzarella production, including working with doughs and curds by hand.
• Knowledge of industrial equipment used in pasta and mozzarella production, with the ability to train staff on proper use and cleaning.
• Strong attention to detail and excellent communication skills.
• Ability to speak, read, and understand English.
• Previous cheese‑making or food production experience preferred.

This role involves standing and moving for extended periods, occasionally lifting up to 30 lbs (or more with assistance). The environment includes exposure to freezers, ovens, coolers, cleaning agents, and loud equipment. Frequent bending, reaching, and other physical activity may be required.
