Kitchen Expo

Position Summary

The Expo is the communication hub between the kitchen and the dining room. This role ensures that every plate leaving the kitchen meets Pete & Sam’s standards for presentation, accuracy, temperature, and timing. The Expo controls the flow of service, supports the kitchen and servers, and helps create a smooth, efficient guest experience.

• Ensure every dish is plated correctly and matches restaurant standards
• Check plate presentation, cleanliness of rims, garnishes, and accuracy
• Confirm all food is hot and ready before leaving the kitchen
• Verify special requests and modifications are correct
• Maintain consistency with Pete & Sam’s signature presentation

• Act as the main line of communication between kitchen and servers
• Call out orders clearly and confidently to servers
• Organize tickets and control the pace of service
• Ensure appetizers, entrées, and sides are timed properly
• Communicate delays or issues to management and front of house

• Keep expo station clean, stocked, and organized at all times
• Manage ticket flow to avoid backups or mistakes
• Help coordinate large parties and busy rushes
• Maintain awareness of the entire dining room flow
• Assist in running food when needed

• Work closely with chefs, line cooks, and servers as one team
• Support kitchen during high-volume periods
• Help maintain a calm, focused environment under pressure
• Set the tone for urgency, professionalism, and teamwork
