Overview

Commercial Bakery Manager to oversee the daily operations of our bakery production. The ideal candidate will ensure the efficient production of high-quality baked goods, manage a team of bakers and staff, maintain inventory, and uphold strict health and safety standards. The Bakery Manager will be responsible for meeting production goals, improving operational efficiency, and ensuring customer satisfaction.

Key Responsibilities
  • Production Oversight:
    Supervise all bakery production processes, including mixing, baking, decorating, and packaging of products; ensure the production of consistent, high-quality baked goods (bread, cakes, pastries, etc.) in line with company standards and customer specifications; monitor production schedules to ensure timely delivery of products to retail stores or customers.
  • Ingredient Costing:
    Accurately track and calculate the cost of raw materials and ingredients for all bakery products; monitor market prices and adjust ingredient purchasing decisions to maintain cost-efficiency; work closely with suppliers to negotiate favorable pricing and delivery terms while ensuring product quality; maintain accurate records of ingredient quantities, costs, and supplier data.
  • Product Costing:
    Calculate the total cost of each baked product, factoring in raw materials, labor, utilities, and overhead; establish pricing structures that allow for competitive market positioning while ensuring profitability; analyze product performance and cost variances, recommending adjustments to improve profitability; conduct regular cost reviews and implement cost-saving initiatives across the product range.
  • Team Leadership:
    Manage, train, and develop bakery staff, including bakers, decorators, and assistants; delegate daily tasks, ensuring efficiency and adherence to quality and safety protocols; motivate the team to maintain a positive working environment, fostering collaboration and high morale.
  • Inventory And Supply Management:
    Oversee inventory levels of raw materials, ingredients, and packaging supplies, ensuring timely restocking and cost control; manage relationships with suppliers and vendors, ensuring the consistent quality and timely delivery of ingredients and materials; monitor and control waste, optimizing resources and minimizing costs; implement a streamlined inventory system to reduce waste, prevent stockouts, and minimize excess stock; perform regular stock audits to ensure inventory accuracy and reconciliation of stock discrepancies;

    work with the production team to forecast ingredient requirements based on projected sales and order volumes.
  • Quality Control:
    Implement and maintain strict quality control processes to ensure products meet or exceed customer expectations and health regulations; ensure cleanliness and hygiene standards are maintained in the bakery and production areas.
  • Health, Safety, And Compliance:
    Enforce safety and sanitation procedures in compliance with local and national health regulations; conduct regular audits to ensure workplace safety and that all equipment is in good working order; maintain and monitor bakery equipment, coordinating regular maintenance and repairs.
Requirements
  • Proven experience as a Bakery Manager, Production Manager, or in a similar supervisory role within the food service industry.
  • Strong knowledge of baking techniques, recipes, and production processes.
  • Exceptional leadership, communication, and interpersonal skills.
  • Excellent organizational and time management abilities.
  • Ability to work under pressure and handle a fast-paced environment.
  • Familiarity with food safety regulations and quality control standards.
