Job Description

Summary:

Responsible for planning and directing activities of the Food & Nutrition Services department to provide quality food service for patients, hospital employees, and visitors. Ensures all applicable standards are met by Joint Commission and/or the credientialing agency. Works under the supervision of the Registered Dietitian when engaged in patient nutrition care activities and provides key oversight and communication concerning nutrition services.

Under the direct supervision of the Administrator for delivery of quality food services Employee is subject to call back and overtime as required by the hospital.

ESSENTIAL JOB FUNCTIONS:

Supervises all aspects of production and cafeteria operation according to budgetary requirements, labor allocations and departmental and hospital policies and procedures. Maintains high standards of institutional food service and good customer service. Responsible for providing production related training to staff as needed. Coordinates development of cafeteria menus. Assists production staff as needed. Coordinates financial data for completion of end of month reports and cost accounting.

Maintains invoices and credit logs accurately. Maintains protocols for purchasing, receiving, storage and physical inventory as directed by department manager. Orders groceries per patient and cafeteria menus. Assists with development of staff scheduling and adjusts work schedule as needed. Fills in willingly when short staffed. Maintains thirty (30) day cycle of patient and cafeteria menus, production sheets, and order guides .Directs

catered functions as needed. Responsible for employee appraisals by completing individual assessments on each staff. Maintains performance documentation throughout the year for staff, as needed. Plans and implements Quality Plus indicators and reports outcomes and trends. Performs assigned shift responsibilities efficiently and productively as outlined by that specific job description when needed. In collaboration with and under the supervision of the RD, performs data collection and other activities which contribute to the nutrition assessment of patients;

development of nutrition related goals and objectives and implementation of the nutritional care plan. Implements and monitors standard nutrition intervention to meet the nutritional needs of the patient, including but not limited to prescribed diets, snacks/nourishments, medical food/nutritional supplements, and monitoring data collection for nutritional support therapies such as tube feedings. Obtains diet histories, food preferences, adjust meal selections for food preferences and provides education and guidance on food choices based on therapeutic guidelines.

Participates in multi disciplinary teams by contributing nutritional expertise. Performs related responsibilities as required or directed.

JOB SPECIFICATIONS:

EDUCATION:

Minimum of 2 years undergraduate studies in the field of food & nutrition.

LICENSURE, REGISTRATION, CERTIFICATION:

Registration as a Dietetic Technician, Registered (DTR) by the Academy of Nutrition & Dietetics.

EXPERIENCE:

Experience in food service management and techniques of clinical nutrition as normally acquired with 5 years of experience preferred.

KNOWLEDGE, SKILLS AND ABILITIES:

Skills and proficiency in the principles, concepts, and techniques of food service management and clinical nutrition practice setting.

INTERPERSONAL REQUIREMENTS:

Communication skills to interact on a frequent basis with administration, medical staff, nursing staff, vendors, patients, and families to provide information, render professional judgments, and resolve complaints.

Contributes to a positive work environment and the overall team effort of the department.

DIRECTION/SUPERVISION REQUIREMENTS:

Directly supervises all employees of the production staff.

PHYSICAL DEMANDS:

Prolonged periods of walking and standing on a frequent basis. Some heavy lifting required.

ENVIRONMENTAL CONDITIONS:

Frequent exposure to wet and slippery floors. Possible exposure to contagious diseases.
