Check items against recipe cards and verify use records for all items served;
Monitor the line setup prior to meal periods for maximum efficiency;
Prepare food of consistent quality following recipe cards and production/portion standards;
Date and rotate perishables and ensure proper storage temperatures;
Assist in keeping buffet stocked and managing plan to correct food cost problems
