620 Food & Beverage Steward

Maintains an active inventory on all food and beverage items for the main kitchen. Maintains an active inventory, sizing, order, and placement of all uniforms that are issued to kitchen staff.

RESPONSIBILITIES:

• Maintains all areas where food and beverage products are stored. This includes shelving height and placement, proper rotation and storage practices, monitoring temperatures of cooler and freezer space, and the proper dating of food products.
• Maintains cleanliness of food and beverage storage areas including sweeping and mopping.
• Counts active inventory on high-dollar items on scheduled days.
• Maintains a monthly inventory on all food and beverage items from the main kitchen which includes all paper products that are needed in department. Inventory is to be taken on the last day of each month.
• Assures all products received are fresh and entire order being billed for is accounted for in its entirety. This must be done upon delivery. Assures items that may be damaged are sent back with driver upon receipt and also assures we are credited for damaged goods.
• Maintains a record keeping system, copying invoices and coding for billing purposes.
• Assures all requisitions for food orders are signed by restaurant manager.
• Maintains an ordering process to accommodate all functions that are catered by restaurant.
• Inspects all goods upon delivery to catch any mis-weighed products before accepting from the driver.
• Maintains knowledge of all events in the property as a whole.
• Attends and/or facilitates all mandatory meetings and training.
• Maintains confidentiality at all times.
• Is sensitive to Native American Culture.
• Operates within the parameters of the Leech Lake Gaming Human Resource Policy, Departmental Policy Manual and all Tribal Internal Controls (TICs), and all other applicable regulations.
• Secures the assets of Leech Lake Gaming and the Leech Lake Band of Ojibwe.
• Performs other duties as assigned.

Position Requirements

• Excellent organizational skills.
• Ability to read, write and possess basic math skills.
• Ability to work with vendors and drivers in a professional manner.
• Ability to work quickly, effectively, and have the best interest of the department in consideration at all times.

• Ability to lift and carry products that weigh 50 lbs or more, using a dolly when needed.
• Subject to internal working conditions which includes a smoking environment as well as an alcohol establishment.

Education Required: High School Diploma or General Education Equivalency (GED).

Experience: Six months to one year of related experience.

Certificates & Licenses: Must meet Tribal/State compact licensing requirements, pass a criminal background check, and submit to drug testing.
