The Sous Chef is responsible for assisting in the daily culinary operations of the Surgery Recovery Wing, ensuring the preparation and delivery of high-quality, nutritionally appropriate meals that support patient healing and recovery. This role maintains strict compliance with healthcare food safety standards, therapeutic diet requirements, and sanitation regulations while promoting a culture of service excellence and teamwork.
Key Responsibilities- Assist in planning, preparing, and executing daily meal production for patients, physicians, and staff.
- Ensure all meals comply with prescribed therapeutic diets (e.g., low sodium, diabetic, renal, cardiac, clear/full liquid).
- Follow standardized recipes and portion control guidelines.
- Oversee food preparation to ensure consistency, quality, and presentation standards.
- Modify menus as directed by Registered Dietitians or clinical staff.
- Ensure meals are prepared and delivered in a timely manner according to recovery schedules.
- Support individualized patient dietary needs and restrictions.
- Respond promptly to special meal requests or dietary adjustments.
- Promote a positive, healing-focused dining experience.
- Maintain strict adherence to HACCP guidelines.
- Ensure compliance with local health department regulations, CMS standards (if applicable), and facility policies.
- Monitor food temperatures, storage procedures, and sanitation practices.
- Conduct regular kitchen inspections to ensure cleanliness and safety.
- Supervise culinary staff during assigned shifts.
- Train and mentor cooks and food service associates.
- Enforce workplace professionalism and safety standards.
- Assist in performance management and coaching.
- Assist with inventory management and ordering.
- Monitor food waste and implement cost-control measures.
- Ensure proper labeling and storage of all food items.
- Support budgetary goals and efficient resource utilization.
- Culinary degree or equivalent experience preferred.
- Minimum 3–5 years of culinary experience; healthcare or institutional experience preferred.
- Knowledge of therapeutic diets and medical nutrition guidelines strongly preferred.
- Serv Safe Certification or equivalent food safety certification required.
- Strong understanding of sanitation, infection control, and regulatory compliance.
- Ability to work in a fast-paced, high-accountability healthcare environment.
