Operator Retort- 3rd Shift

Overview

The Retort Operator operates FMC rotary sterilizers, monitors critical control points (especially time and temperatures), and ensures finished products meet thermal process requirements. The operator monitors equipment to ensure it runs within expected parameters and checks sterilized samples for flavor, grain, and texture to confirm commercial acceptability. Employees follow plant safety and quality rules, report incidents and unsafe conditions immediately, and maintain regulatory compliance.

• Operate machinery, monitor critical control points, and record required information at prescribed intervals.
• Start up machinery and run pilot samples to check product heat stability prior to sterilizing.
• Shutdown machinery, complete logs, recorder charts, and other records.
• Lubricate equipment and clean the work area, including equipment, floors, and walls; perform boil out of sterilizers.
• Maintain proper chlorine concentrations in process cooling water.
• Complete sensory evaluations on finished goods and perform rework as needed.
• Check initial temperatures of mixes.
• Perform boil-out/logout procedures and thermometer checks.
• Determine quantity of stabilizer to be added if necessary.
• Perform SAP transactions as necessary.
• Maintain basic computer literacy to operate equipment and perform SAP transactions.

The approximate hourly pay for this position is $25.13. Final compensation may vary based on factors including knowledge, skills, abilities, and geographic location.
