THE POSITION

The Custodial Cook supervises a staff of employees and inmate workers and coordinates and implements the food service to ensure high standards of nutrition, food production, and service. This individual works in the Probation Department custodial facility that may include Juvenile Hall. The person in this classification works under the general supervision of a Supervising Custodial Cook. This position is also subject to overtime, standby, callback, shift, weekend, and holiday assignments.

Unless otherwise provided, this position is part of the Classified Service of the County and is assigned to the Crafts/Maintenance Institutional Bargaining Unit for labor relations purposes.

Individuals who are in a full‑time classification position are required to serve a twelve‑month probationary period, which may be extended an additional six months, for a total of eighteen months.

RESPONSIBILITIES
  • Supervise and participate in the preparation, cooking, baking, and serving of meals;
  • Utilize leftovers efficiently and effectively;
  • Oversee personnel in the sanitation and upkeep of kitchen facilities and equipment;
  • Drive food transport vehicle;
  • Maintain defined standards of sanitation and safety for personnel, food preparation, kitchen equipment, and physical plant;
  • Operate, clean, and maintain job related equipment including food slicers, mixers, blenders, toaster, ovens, refrigerators, ranges, pans, racks, knives, and other items;
  • Ensure safety and sanitation procedures are followed in the storage, preparation, and service of food;
  • Assign work and check on its completion;
  • Observe tray line to assure that foods are properly portioned and arranged on trays;
  • Maintain proper security procedures while juveniles or inmates are assigned to kitchen duty;
  • Manage the preparation of food within an established production system following standardized recipes, preparation methods, and food handling techniques to ensure acceptable standards;
  • Participate in developing and maintaining routine procedures for accuracy, consistency, and timeliness;
  • Direct preparation to account for special menus and catering activities;
  • Requisition food and supplies according to established specifications, determined by menu, volume, and needs;
  • Recommend the purchase of small equipment for area of responsibility;
  • Maintain required department records;
  • Establish and maintain a system to check, inspect, and store all incoming food and supplies;
  • Participate in establishing and/or amending departmental procedures that affect the Custodial Cook responsibilities; and
  • Perform related duties as assigned.
KNOWLEDGE
  • The methods, procedures, materials, and equipment involved in the large scale preparation of food;
  • Health hazards, food storage procedures, sanitation, and safety practices in kitchen operations;
  • The use and alteration of standard recipes to meet varying yields;
  • Maintaining routine inventory records;
  • Principles and practices of supervision;
  • Nutrition and dietetics necessary for basic menu planning;
  • Food transport vehicle, pallet jack, and forklift equipment;
  • Use and care of kitchen utensils and equipment;
  • Principles and practices of sanitation and personal hygiene as applied to food preparation and service, and cleaning of kitchen equipment, utensils, walls, and floors;
  • Principles and practices of safety as related to cleaning, food preparation, and service; and
  • Simple arithmetic and division, sufficient to make correct change, maintain simple inventory records, and properly measure food amounts.
SKILLS/ABILITIES
  • Supervise and participate in the preparation of balanced and appetizing foods on a volume and individual basis with a minimum of waste;
  • Read and apply various scales of measurements and portion items accurately;
