Brine Team Member
The Brine Team Member monitors the brining solution, times the cheese for proper brining, and maintains the brine logs.
Duties and Responsibilities- Ensure cheese is placed into the brine after the acidification stage
- Monitor the salinity, temperature, and Ph level of the brine and take corrective action, as needed, to maintain target levels
- Safely and efficiently move products and materials within the facility, following proper handling procedures. Remove the cheese from the brine once proper brine time has been achieved
- Maintain the cleanliness of the tanks and brine room
- Cleans and maintain equipment, tools, and work areas following proper sanitation and cleaning procedures to maintain a clean and safe work environment.
- Keep accurate records of cheese brining
- Report any and all injuries to your supervisor or manager at the time of injury.
- Adheres to ERU food safety policies and all government food safety and sanitation regulations (ex. FDA, HACCP, GMP, OSHA)
- Adheres to safety guidelines and complies with all safety protocols, including the proper use of personal protective equipment (PPE).
- Attends safety and department meetings and completes all required training in a timely manner.
- Identifies and reports potential safety hazards to ensure a safe working environment.
- Performs all other duties as assigned.
- Clean and sanitize cheese racks and forms
- Form and brine cheese according to the daily recipe
- Flip cheese to ensure even knitting of curd
- Confirm piece count of forms on presses and tables
- Previous experience working in a cheese making or food manufacturing environment is preferred but not required.
- Ability to add, subtract, multiply, and divide whole numbers
- Basic computer skills
- Ability to read and interpret work instructions.
- Attention to detail and commitment to producing high-quality products.
- Physical stamina to perform physically demanding tasks, including lifting heavy objects and standing for extended periods of time.
- Ability to work independently with minimal supervision and as part of a team.
- Ability to work in a fast-paced environment and adaptable to change.
- Ability to work overtime or extend shifts as needed.
- Ability to work with automated equipment
- History of good attendance
- Good organization and problem-solving skills
- No travel required
