• Train and supervise inmate workers in all aspects of commercial cook–chill food production while ensuring compliance with facility security, safety, and sanitation standards.
• Oversee ingredient preparation, production orders, and food quality using standardized recipes and HACCP guidelines.
• Assist in screening inmate workers, maintain production records and reports, and ensure efficient operation in a high‑stress, fast‑paced environment.

• Successful completion of a vocational training program in food service operation/cooking and/or one year of institutional or commercial cooking or production experience.
• Successful completion of Serv Safe during the first six‑month probationary period.
• Successful completion of Better Processing School within the first year.
• Strong management ability to deal effectively and professionally with inmates.

Hourly rate: $24.74.
