Primary Purpose

The Pastry Assistant is responsible for delivering exceptional performance in their role, embodying Ranch core values, and upholding the standards set for Forbes Five-Star properties and members of Relais & Chateaux. This position ensures the efficient and high-quality production of all pastry items. By providing meticulously prepared and consistently excellent baked goods and desserts, the Pastry Assistant contributes directly to the property’s reputation for excellence.

Key Responsibilities
  • Prepares and bakes a variety of pastries, desserts, breads, and other sweet goods according to recipes and standards.
  • Assists the Head Pastry Chef in all aspects of pastry production; ensures adherence to Ranch standards for quality, taste, and presentation.
  • Collaborate with the culinary team to ensure seamless service and timely delivery of pastry items for all outlets and events.
  • Maintain a clean, organized, and sanitary workstation, adhering to all food safety and hygiene regulations.
  • Support Ranch standards by consistently producing visually appealing and delicious pastry creations that enhance the guest experience.
  • Assist with inventory management including stocking, rotating, and monitoring ingredient levels.
  • Operate and maintain all pastry equipment in a safe and efficient manner.
  • Perform additional duties as assigned by Pastry Chef.
Qualifications
  • High school diploma or equivalent; culinary degree or pastry certification preferred.
  • Minimum of 1-2 years of experience in a professional pastry kitchen or similar setting.
  • Strong understanding of baking techniques, ingredients, and kitchen equipment.
  • Excellent communication skills, attention to detail, and a passion for pastry arts.
  • Ability to follow recipes accurately, work efficiently under pressure, and maintain a positive attitude.
  • Ability to work independently and collaboratively in a fast-paced, high-expectation environment.
  • Ability to stand for extended periods, walk, bend, lift up to 50 pounds, and carry trays of product.
  • Ability to work flexible hours, including weekends and holidays, as required by business needs.
  • Manual dexterity for intricate pastry work and repetitive tasks.
