F&B Controller
Location:
Mumbai
Role Overview
Control F&B costs for luxury restaurants/banquets, ensuring profitability through inventory, analysis, and compliance in high-volume hospitality ops.
Key Responsibilities
Compute food/beverage costs, recipe costing, menu pricing; engineer menus for target GP .
Conduct daily/weekly/monthly inventories, variance reports, track wastage/pilferage/slow-movers.
Verify POS sales, KOTs/BOTs, voids, settlements; reconcile with PMS/accounts.
Audit receiving/stores, requisitions, non-food purchases; manage par levels/budgets.
Liaise with Chef/F&B Manager/suppliers; prepare reports, advise on cost controls.
Requirements
B.Com/Finance; 4-6 years hospitality F&B control (hotels/clubs essential).
Excel/POS proficient;
Mumbai market knowledge, analytical mindset.
Detail-oriented for luxury banqueting standards.
