The Manager - Kitchen Stewarding is responsible for leading and managing all stewarding operations across the Jio World Convention Centre, ensuring the highest standards of cleanliness, sanitation, hygiene, and operational support for culinary and Food & Beverage operations. The role plays a critical part in supporting large-scale conventions, exhibitions, banquets, corporate events, and premium hospitality experiences by ensuring the efficient management of stewarding resources, equipment, and compliance with food safety standards.
Key Responsibilities
Stewarding Operations
Lead and manage the day-to-day stewarding operations across all kitchens, banquet areas, convention halls, exhibition venues, VIP lounges, and event spaces.
Ensure the availability, cleanliness, and timely distribution of kitchen equipment, crockery, cutlery, glassware, and service utensils.
Plan and deploy stewarding manpower to support multiple concurrent events and high-volume operations.
Maintain smooth coordination between Culinary, Food & Beverage Service, Banquets, and Event Operations teams.
Hygiene & Sanitation
Ensure the highest standards of kitchen hygiene, sanitation, and cleanliness in accordance with HACCP, FSSAI, and company standards.
Monitor cleaning schedules for all kitchens, dishwashing areas, waste disposal zones, storage areas, and back-of-house facilities.
Conduct regular hygiene inspections and ensure timely corrective actions.
Maintain cleanliness of kitchen equipment, workstations, drains, floors, exhaust systems, and waste handling areas.
Equipment & Asset Management
Manage the inventory and maintenance of all kitchen operating equipment and stewarding assets.
Monitor breakage, loss, and replacement of crockery, cutlery, glassware, chinaware, and kitchen utensils.
Coordinate preventive maintenance and repairs with the Engineering department.
Ensure optimum utilization and proper storage of stewarding equipment.
Waste Management & Sustainability
Implement effective waste segregation, disposal, and recycling practices in line with organizational sustainability initiatives.
Monitor food waste, disposal procedures, and environmental compliance.
Support initiatives to reduce water, chemical, and energy consumption within stewarding operations.
Team Leadership
Lead, motivate, train, and develop Assistant Stewarding Managers, Supervisors, and Stewarding Associates.
Conduct regular training on hygiene standards, chemical handling, equipment usage, safety practices, and operational procedures.
Prepare duty rosters, manpower deployment plans, and leave schedules.
Drive employee engagement, productivity, and performance management initiatives.
Compliance & Safety
Ensure compliance with HACCP, FSSAI, fire safety, occupational health and safety, and statutory regulations.
Maintain Material Safety Data Sheets (MSDS) and ensure the safe storage and handling of cleaning chemicals.
Conduct regular safety audits and risk assessments.
Ensure adherence to company policies, SOPs, and audit requirements.
Inventory & Cost Control
Manage departmental budgets and stewarding operating expenses.
Monitor the consumption of cleaning chemicals, disposables, and stewarding supplies.
Control equipment breakage and operational costs through effective planning and supervision.
Participate in inventory audits and stock verification.
Coordination & Stakeholder Management
Collaborate with Culinary, Food & Beverage, Housekeeping, Engineering, Procurement, and Event Operations teams to ensure seamless support during events.
Coordinate with external vendors for stewarding equipment, cleaning chemicals, and outsourced manpower where applicable.
Support large-scale conventions, exhibitions, banquets, and special events through effective operational planning.
Desired Candidate Profile
Education
Degree or Diploma in Hotel Management, Hospitality Management, or a related discipline.
Certification in Food Safety, HACCP, or Hygiene Management is preferred.
Experience
8 - 12 years of experience in Kitchen Stewarding within luxury hotels, convention centres, integrated resorts, or large-scale banquet operations.
Minimum 3 - 5 years in a supervisory or managerial stewarding role.
Experience in managing stewarding operations for high-volume banquets, exhibitions, conventions, and large events is highly desirable.
