Angel Fire Resort is looking for an enthusiastic Sous Chef to join our team at our fine dining restaurant, Elements. Working under the Chef, you will create quality dishes, ensure a clean and sanitary workspace, and contribute to an efficient and profitable kitchen. The successful candidate will share our passion for excellence and will function as Head Chef in the absence of the Chef.
This position includes performing supervisory duties as well as taking a hands‑on approach and working on the line throughout the majority of each shift. Experience working in fine dining is a preferred though not required.
To be successful in this position you will:
- Assist the Chef in developing a kitchen staff that is obsessed with food quality, flavor, consistency, and presentation
- Sets the example for the kitchen staff by scrupulously following food handling and cleanliness policies and leading others to do the same
- Implements systems that result in the staff’s execution of menu items with consistency and efficiency
- Eagerly takes ownership of assigned areas of responsibility within the kitchen with a positive, helpful, can‑do, hardworking attitude that is contagious throughout the operation
Starts at $23/hr depending on experience

QualificationsExperience working at a destination resort or large dynamic company is preferred. Experience in full‑service, fine dining restaurant(s) is required.
Education and/or ExperienceTwo- or four‑year certificate from a culinary college or technical school preferred; and/or at least three years of related experience, and at least two years of successful managerial experience. Or an equivalent combination of education and experience. Solid experience in all stations of the kitchen (line cook, preparation of breakfast, lunch, dinner, private functions, dishwashing, catering, etc.)
Essential Duties and Responsibilities(other duties may be assigned)
- Leading, training & mentoring all kitchen personnel to execute dishes to a high standard set in place by Chef and performing consistency while creating a strong team.
- Designing menus using locally sourced ingredients whenever possible, ensuring that ingredients and items are changed based on seasonality—and always creative.
- Purchasing and managing inventory.
- Maintaining a clean, organized, and sanitized kitchen at all times.
- Working with the Chef on special event planning, budgeting, and overall event execution.
- Establishing, growing, and maintaining vendor relationships.
- Reviewing menus, analyzing recipes, determining food, labor, and overhead costs; and assigning prices to menu items.
- Directing food apportionment policy to control costs.
- Establishing and enforcing NM Health Department Food Service and sanitation standards for restaurant.
- Overseeing of Commissary prepped food items
