The Big Game Hunt Butcher is responsible for processing and preparing wild game animals brought in by hunters. This includes the skilled breakdown of large game animals such as elk, deer, bear, and other wild and domestic animals into high-quality cuts of meat. The Butcher must ensure proper handling, storage, and processing of the meat, while adhering to safety, cleanliness, and health regulations.
A successful candidate will have a strong knowledge of butchery techniques, an understanding of game anatomy, and attention to detail.
- Skillfully break down large game animals into primal and subprimal cuts.
- Trim, bone, and prepare cuts of meat according to customer specifications, ensuring maximum yield and quality.
- Prepare specialty cuts, sausages, and ground meat as requested by customers.
- Properly package and label meat for storage and customer pick‑up.
- Ensure proper chilling, hanging, and storage of game animals prior to butchering.
- Adhere to health and safety regulations for handling and storing raw meat, maintaining correct temperatures and sanitary conditions.
- Monitor and ensure that all equipment used is sanitized and in good working order.
- Inspect game carcasses for quality and freshness before processing.
- Identify and communicate any spoilage or issues with the meat to management.
- Maintain a high standard of cleanliness and professionalism in all areas of the butchery.
- Communicate with hunters and customers to understand their preferences and provide expert advice on meat cuts, cooking methods, and preparation.
- Ensure customer satisfaction by meeting specific requests for custom cuts, sausages, and specialty preparations.
- Assist with packaging and delivering the finished product to customers in a timely manner.
- Safely operate butchery tools and equipment such as knives, saws, grinders, and vacuum sealers.
- Maintain a clean and organized workspace, adhering to all safety protocols to prevent injury.
- Regularly inspect and clean butchery equipment, reporting any maintenance needs to management.
- Assist with tracking and managing inventory of game animals, cuts of meat, and supplies such as packaging materials.
- Help ensure accurate records of processed animals and customer orders.
- High school diploma or equivalent; formal butchery training or certification is a plus.
- 2–4 years of experience in butchering, particularly with large game animals, or equivalent experience in a professional butchery or processing facility.
- Strong knowledge of game anatomy and butchery techniques specific to wild game animals.
- Proficiency in using butchery equipment, such as knives, saws, grinders, and slicers.
- Familiarity with health, safety, and food handling regulations, especially in processing wild game meat.
- Excellent attention to detail and manual dexterity.
- Strong customer service skills and the ability to communicate clearly with hunters and customers.
The physical demands of this position include frequent standing, walking, using hands to grasp, reach, stoop, kneel, crouch, and lift or move up to 65 pounds. The role requires the ability to stand for several hours and to use handheld communication devices.
Work EnvironmentThe work environment is loud and may involve exposure to second‑hand smoke, biohazardous fluids such as blood, and hostile interactions with guests. The role may involve high‑stress situations.
