Head Baker Requirements & Qualifications
- Completion of a culinary school program or apprenticeship preferred
- 2–4 years of professional baking experience preferred
- Experience with mixing, bench work, proofing, and baking bread
- Experience with laminated doughs for pastry production
- Knowledge of Scandinavian or European bread traditions is a strong plus
- Ability to work overnight shifts, weekends, and some holidays
- Ability to lift 50+ lbs without restrictions and stand/bend for extended periods
- Strict adherence to health, safety, and food handling standards
- Dependable, hardworking, and committed to team collaboration

Head Baker Day-to-Day Responsibilities
- Oversee daily production of artisan breads, ryes, rolls, and laminated dough pastries using traditional techniques
- Manage, schedule, and train a team of up to six bakers
- Monitor and maintain product quality, making necessary adjustments to baking processes
- Organize and ensure cleanliness of dry storage and refrigerated areas
- Receive and verify deliveries, monitor inventory, and properly label/store all ingredients
- Ensure strict compliance with health, safety, and food safety standards
