We’re looking for an experienced Sous Baker with strong pastry, leadership, and organizational skills to join the opening team at our new bakery in Lantern House.

This role is ideal for someone who combines technical precision with the ability to lead and develop a team. Working closely with the Head Baker, you’ll play a key role in building the bakery culture, ensuring operational excellence, and maintaining the high standards that define La Cabra.

As Sous Baker, you’ll be responsible not only for producing exceptional baked goods but also for supporting the daily management of the bakery, coordinating production, mentoring the team, and helping create an efficient and positive working environment.

Responsibilities
  • Support the Head Baker in the daily operation of the bakery.

  • Lead, motivate, and develop a team of bakers through feedback, and hands‑on training.

  • Coordinate daily production to ensure products are prepared efficiently and consistently.

  • Maintain the highest standards of quality, food safety, cleanliness, and organization.

  • Help plan production schedules according to sales forecasts and operational needs.

  • Monitor product quality throughout the day and ensure consistency across all batches.

  • Assist with ordering ingredients and maintaining appropriate inventory levels.

  • Minimize waste through careful planning and stock management.

  • Support administrative tasks including production planning, scheduling, reporting, and operational documentation.

  • Ensure recipes, procedures, and bakery standards are followed consistently.

  • Foster a collaborative, positive, and respectful working environment.

  • Take responsibility for opening or closing bakery operations when required.

What we’re looking for
  • Several years of professional bakery or pastry experience.

  • Previous experience supervising or leading a bakery team.

  • Strong understanding of laminated doughs, pastry, bread production, and bakery operations.

  • Excellent organizational and time‑management skills.

  • Comfortable balancing hands‑on production with administrative responsibilities.

  • Strong communication skills and a collaborative leadership style.

  • Ability to stay calm and organized in a fast‑paced production environment.

  • Passion for craftsmanship, continuous improvement, and developing people.
