The Overnight Baker plays a vital role in bringing The Buttery's pastries to life each day. Working from 10pm-6am
, you'll prepare, proof, and bake a variety of pastries with precision and care - ensuring every item meets our high standards for flavor, quality, and consistency.

This is a hands-on role for someone who takes pride in their craft, thrives in a fast-paced, collaborative environment, and finds joy in the quiet rhythm of overnight baking. Key Responsibilities

• Daily Production:
  Prepare, proof, and bake a variety of baked goods and viennoiserie, following established recipes and production guidelines.
• Time Management:
  Execute baking schedules to ensure all products are ready for delivery on time without compromising quality.
• Quality Assurance:
  Monitor and maintain consistency in taste, texture, and presentation across all baked goods.
• Equipment Operation:
  Safely operate mixers, ovens, proofers, and other baking equipment.
• Organization & Cleanliness:
  Maintain a clean, organized, and food-safe workspace, adhering to hygiene and safety standards.

  Work closely with other bakers and kitchen staff to meet production goals efficiently.
• Problem-Solving:
  Identify and address any issues during the baking process to ensure quality and timeliness.

Qualifications

• 1+ year of professional baking experience, preferably in bread, viennoiserie, or pastry production.
• Strong understanding of baking processes, including proofing, fermentation, and lamination (preferred but not required).
• Ability to manage time effectively in a high-volume, fast-paced environment.
• Excellent attention to detail and a commitment to quality.
• Flexibility to work early mornings, weekends, and holidays as needed.
• A team-oriented mindset and willingness to take direction.
• Effective communication and collaboration skills to work with cross-functional teams.
• Physical ability to lift up to 50 pounds, stand for extended periods, and perform repetitive tasks.
