Dacotah Dining Lead Line Cook

ESSENTIAL JOB FUNCTIONS Competently utilize all Dacotah Dining kitchen stations.

Work any station and shift as needed.

Assume a leadership role in the kitchen.

Assist Chef de Cuisine as needed.

Assume responsibility for all food produced by the kitchen.

Assist with control of food and labor costs.

Provide training and guidance to kitchen staff.

Motivate kitchen staff and ensure that they are kept busy.

Maintain cleanliness and sanitation of kitchen area.

Perform other duties and responsibilities as assigned.

EXPERIENCE & QUALIFICATIONS Prior line cook experience at a full service restaurant preferred.

Minimum of two years in a leadership role.

SKILLS, KNOWLEDGE & ATTRIBUTES Strong culinary, knife and cooking station skills.

Strong leadership and communication skills.

Strong organizational and teamwork skills.

Knowledge of frying, sautéing, broiling, basting, baking, poaching and roasting.

Knowledge of proper sanitization techniques.

Able to produce consistently high-quality food products.

Able to cook steaks to temperature.

Self-motivated and dependable.

UNIVERSAL REQUIREMENTSSensitivity to various cultures, including Native American cultures.

Regular attendance and punctuality.

Able and willing to work any changes in scheduled hours as required.

Serve as a credit to Jackpot Junction Casino Hotel, and encourage others to do the same.

Able to stand for extended periods of time.

Able to twist, bend and squat frequently.
