Description

Position Overview

As a Fish Cutter, you will play a critical role in delivering authentic Japanese cuisine and exceptional customer service to our community. Your primary responsibility is to expertly cut, fillet, and prepare various types of fish and seafood according to traditional Japanese standards and customer specifications. You will ensure product quality, freshness, and food safety, contributing directly to our store’s reputation for excellence in Japanese seafood.

Key Responsibilities

  • Fish Preparation: Cut, fillet, and portion a wide variety of fish and seafood for retail display, sushi, sashimi, and customer orders, following precise techniques and store standards. This would include whole fish and portioned sides of fish.
  • Quality Assurance: Inspect seafood for freshness, quality, and safety, removing unsatisfactory products and maintaining the highest hygiene standards.
  • Display & Merchandising: Arrange and replenish seafood displays to maximize visual appeal.
  • Customer Service: Provide knowledgeable, friendly service, answering customer questions about fish varieties, preparation methods, and cooking tips. Take special requests for custom cuts as needed.
  • Inventory Management: Assist with receiving, inspecting, and storing seafood deliveries. Monitor inventory levels, rotate stock, and minimize waste.
  • Sanitation & Safety: Maintain a clean, organized, and safe work environment. Follow all health, safety, and sanitation regulations, including proper handling and storage of seafood and use of equipment.
  • Equipment Operation: Safely operate knives, scales, and other fish processing equipment. Maintain tools in clean and sharp condition.

Qualifications

  • Previous experience as a fish cutter, seafood processor, or sushi cook preferred; familiarity with Japanese fish preparation techniques is a strong asset.
  • Excellent knife skills and knowledge of seafood species preferred.
  • Ability to work in a cold, fast-paced environment.
  • Strong attention to detail and commitment to quality.
  • Excellent customer service and communication skills.

Ability to lift up to 50 lbs and stand for extended periods.
