OverviewBe able to lead the culinary team supporting the Restaurant operations. This role has an overall responsibility for the efficient and effective running of the kitchens and food production.
Responsibilities- Manage the daily production, preparation, and presentation of all food for the hotel's restaurant and banquets to ensure a quality, consistent product that conforms to Omni Standards.
- Manage associates in scheduling, training, development, coaching/counseling, and reviews. Attract, interview, retain, and motivate associates while providing a safe work environment.
- Inspect all food service sections during service to ensure standards are maintained.
- Monitor, analyze, and control labor and food costs; prepare reports and schedules to meet budgets while maintaining or improving quality.
- Work with the Resort Executive Chef on menu creation, costing, and implementation.
- Step in to lead or assist in leadership roles in multiple kitchens (Resort Outlets & Banquets); ensure clear communication across departments and sites when leadership is present or absent.
- Communicate effectively with multiple departments and during guest-facing meetings, tastings, and site visits.
- Meet deadlines set by department heads and keep hourly staff informed of key dates and events.
- Schedule staff according to budget and business forecast; assist in critiquing the monthly P&L based on business levels.
- Direct proper sanitation and maintenance of all kitchen facilities and equipment; ensure all kitchen equipment is in good working order.
- Comply with Eco Sure and health code sanitation standards.
- Direct successful maintenance of walk-in coolers (rotation of food products and cleanliness).
- Advise the resort executive chef on kitchen matters to ensure high standards of cleanliness and hygienic practice.
- Ensure guest satisfaction with smooth day-to-day operation.
- Maintain control of purchasing and receiving standards; work with the storeroom manager and F&B controller to establish and maintain controls.
- Test and evaluate products for quality, considering yield, holding qualities, market price, and wastage.
- Ensure staff understand and meet expectations within proper guidelines; provide support and leadership to achieve Medallia food quality scores.
- Check sign-in and sign-out procedures for kitchen staff.
- Perform other job-related duties as assigned.
- At least 2 years of previous culinary management experience.
- Prior experience in an upscale, full-service kitchen is preferred.
- Excellent customer service; prior admin experience preferred.
- College education and/or culinary degree preferred.
- Knowledge of Microsoft Word, Excel, Delphi or similar programs; ability to access Kronos, Birch Street, and Medallia.
- Ability to interact with guests during tastings and special events; creative menu development while maintaining bottom line.
- Serve Safe certified food manager and applicable food safety certifications required.
- Clear, positive, energetic written and verbal communication; excellent organizational skills.
- Able to work a flexible schedule including nights, weekends, and holidays.
- Ability to stand for extended periods; ability to lift, push, pull, and carry moderate weight; ability to walk/stand for extended periods with bending and twisting.
- Must attain a valid Food Handler certification upon hire.
