Role Overview

The Food & Beverage Manager is responsible for managing the daily front of house operations, employee relations and engagement, P&L, inventory controls, optimizing profits and providing an exceptional experience for Winstar guests.

Essential Duties and Responsibilities
  • Supervise and coordinate activities of the food and beverage outlet staff to ensure that all guests receive prompt and courteous service.
  • Proactively deal with guest queries, advising guests on menus and beverage selections, ensuring satisfaction with food and service, and if necessary responding to complaints in an expeditious manner.
  • Maintain an accurate and up-to-date plan of restaurant staffing needs – prepare schedules and ensure that the restaurant is staffed for all shifts.
  • Ensure consistent high quality of food preparation and service.
  • Inventory Management to include: daily, weekly and monthly inventory tracking and working directly with the purchasing manager for supply requisition and delivery schedules.
  • Adhere to company standards and service levels to increase sales and minimize costs, including food, beverage, supply, utility and labor costs.
  • Maintain professional restaurant image, including restaurant cleanliness, proper uniforms and appearance standards.
  • Ensure that all financial (invoices, reporting) and HR/Payroll related administrative duties are completed accurately, on time and in accordance with company policies and procedures.
  • Supervise general cleaning tasks using standard products as assigned to adhere to health standards.
  • Maintain a favorable working relationship with all company employees to foster and promote a cooperative and harmonious working climate conducive to maximum employee morale, productivity and efficiency/effectiveness.
  • Ensure a safe working and guest environment to reduce the risk of injury and accidents – complete accident reports promptly in the event that a guest or employee is injured.
  • Oversee Supervisors and Staff.
  • Keep Director of Food & Beverage and General Manager promptly and fully informed of all issues (i.e. problems, unusual matters of significance and positive events) and take prompt corrective action where necessary or suggest alternative courses of action.
  • Attend weekly operations meetings.
  • Assist with the management of catering events.
  • Complete other duties as assigned by Management.
Supervisory Responsibilities

Carries out supervisory responsibilities in accordance with all Legends & ASM policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Qualifications
  • Education and Experience:
    • College degree is preferred. Bachelor of Science degree in hotel/restaurant management is desirable. A combination of practical experience and education will be considered as an alternative.
    • Have a minimum of 2 years of hospitality experience in a fine dining restaurant.
    • Must be approved for a Chickasaw Vendor gaming badge.
  • Skills and Abilities:
    • Proficient in the following dimensions of restaurant functions: food planning and preparation, inventory management, sanitation, service standards, staffing and employee management, payroll and financial reporting.
    • Able to organize time effectively, forward plan and prioritize tasks to ensure workload is balanced and urgent situations are dealt with immediately. Ability to multitask and delegate duties when necessary.
    • A genuine interest and understanding in food and drink – wine and cocktail knowledge is essential.
    • Must have excellent knowledge of food and beverage preparations, service standards, guest relations and etiquette.
