Location: Tillamook

Pelican Brewing Company seeks a Head Brewer to lead production at our coastal craft brewery. You'll manage brewing and cellar operations from grain to glass, ensuring quality, consistency, and safety across all beers. Responsibilities include scheduling production for multiple locations, overseeing fermentation and packaging workflows, and maintaining rigorous sanitation standards. You'll guide and mentor a hands-on brewing team, support recipe development and innovation, and track key metrics for efficiency.

Partner closely with restaurant and leadership teams to deliver award-winning beers that showcase Pelican's hospitality and coastal spirit.

Responsibilities

  • Lead day-to-day brewing operations from recipe prep through packaging to ensure quality, consistency, and safety
  • Manage production schedules to meet draft, package, and seasonal demand across Pelican Brewing locations
  • Oversee cellar operations including fermentation, transfers, dry hopping, and quality checks
  • Supervise, train, and mentor brewers and cellar staff to maintain standards and support growth
  • Collaborate with leadership on new beer development, pilot batches, and innovation projects
  • Maintain sanitation, CIP, and safety protocols across brewhouse, cellar, and packaging areas
  • Monitor brewing metrics, yields, and costs to support efficiency and minimize waste
  • Coordinate with restaurant and distribution teams to align inventory and release timelines
  • Maintain detailed brewing logs, SOPs, and quality documentation for audits and consistency
  • Support equipment maintenance planning, vendor coordination, and continuous process improvement
