Job Summary
Lead a team to maintain, service, rebuild, troubleshoot, repair, and operate all cooking‑related equipment and refrigeration to ensure the continuous smooth operation of Universal Orlando. Includes industrial kitchen and bakery equipment, propane and natural gas, and electrical equipment. Perform preventive maintenance and rehabilitate all kitchen equipment to manufacturer’s specifications. Support management in directing and coordinating departmental activities and employees.
Major Responsibilities- Plans and delegates work tasks, communicates performance expectations, coordinates with other departments, and provides two‑way communication among the work team, supervisor, and management. Leads work startup, stoppage, and schedules breaks.
- Diagnoses and repairs all refrigeration equipment including coolers, freezers, ice machines, glycol systems, ice cream machines, and keg coolers.
- Diagnoses and repairs all commercial gas and electric kitchen and industrial kitchen and bakery equipment including fryers, steamers and ovens, steam kettles, tilt skillets, proofers, sheeters, bowl mixers, commercial dish machines, combi‑ovens, stoves, conveyor‑type ovens, broilers, and espresso machines.
- Provides mechanical and technical guidance and expertise to Tech II and Tech III technicians to continually improve education, experience, and skill set within the department.
- Participates in Environmental, Health & Safety responsibilities by following established UO policy, procedures, training, and team member involvement activities.
- Performs other duties as assigned.
- High school degree or GED is required.
- Technical school is preferred.
- Associate degree (AA) is preferred.
- 6+ years of equivalent experience with commercial/industrial bakery, production kitchen, laundry, and refrigeration‑associated equipment, or an equivalent combination of education and experience.
- A valid Florida Driver’s License is required to operate company vehicles.
- Universal Refrigerant Certificate (EPA) is required.
- National standard commercial or industrial repair certification is required.
