Overview

The Closing Shift Leader is responsible for overseeing all front‑of‑house and back‑of‑house operations during evening service and through the end‑of‑shift close. This role ensures exceptional guest service, smooth coordination between FOH and BOH teams, adherence to hotel brand standards, and proper completion of nightly operations, cleanliness, food quality and safety procedures. The Closing Shift Leader acts as the manager‑on‑duty for the restaurant and is accountable for the full operation once senior management has left for the day.

Key Responsibilities
  • This is a working manager position. You will be working as a scheduled staff member throughout the shift while overseeing operations.
  • Oversee all restaurant operations during evening and closing shifts, including dining room, bar, expo, and kitchen coordination.
  • Maintain communication between FOH and BOH to ensure accurate ticket times, food quality, and service flow.
  • Monitor labor, pacing, and productivity across both teams.
  • Address operational issues in real time, including equipment concerns, staffing gaps, or guest volume changes.
  • Lead servers, bartenders, hosts, and support staff throughout the shift.
  • Conduct pre‑shift meetings, assign sections, and ensure staff readiness.
  • Maintain dining room cleanliness, table turns, and service standards.
  • Handle guest concerns, special requests, and service recovery with professionalism.
  • Partner with kitchen leadership to ensure food quality, timing, and safety standards are upheld.
  • Assist with BOH communication, ticket management, and expo line oversight during peak periods.
  • Verify that BOH closing procedures are completed, including cleaning, equipment shutdown, food storage, and labeling.
  • Ensure compliance with health codes, sanitation standards, and hotel brand guidelines.
  • Verify all FOH and BOH closing checklists are completed accurately.
  • Secure all areas of the restaurant, including bar inventory, storage rooms, and kitchen equipment.
  • Prepare nightly shift reports and communicate operational notes to the management team.
  • Ensure the restaurant is fully reset and ready for the next day’s service.
Safety, Compliance & Hotel Standards
  • Enforce hotel policies, brand standards, and safety protocols across FOH and BOH.
  • Respond to incidents, accidents, or emergencies and complete required documentation.
  • Ensure proper alcohol service compliance and food safety practices.
  • Maintain a professional working relationship with other hotel departments (banquets, front desk, engineering, security).
Qualifications
  • Previous supervisory or shift‑lead experience in a full‑service restaurant required; hotel restaurant experience preferred.
  • Strong leadership and communication skills with the ability to manage FOH and BOH teams simultaneously.
  • Solid understanding of restaurant operations, including service flow, kitchen processes, and closing procedures.
  • Ability to remain calm and decisive in a fast‑paced environment.
  • Proficiency with POS systems, cash handling, and nightly reporting.
  • Availability to work evenings, weekends, and holidays.
Physical Requirements
  • Ability to stand, walk, and move between FOH and BOH areas for extended periods.
  • Ability to lift up to 30 lbs as needed.
  • Comfortable working in a high‑energy, hot, and fast‑paced environment.
