About the role

The Culinary Assistant position will assist with daily kitchen production to include the preparation of cold foods, including salads, appetizers, pâtés, terrines, charcuterie, and artistic food presentations. This role manages the cold kitchen station and creates visually stunning dishes and delivery of products to various site locations.

Responsibilities
  • Assist with current food offerings to include slicing, assembling of cheese and charcuterie plates, dish station, food prep set up for food programs, delivery of culinary products
  • Works with the Culinary Team and Manager in food needs and inventory.
  • Assist Culinary team with set up and breakdown of events and daily service.
  • Works with the Culinary Team on menu ideas, tasting food programs and food and wine pairing.
  • Ensures all food production meets TWE and Culinary Manager standards.
  • Support Back of the House duties as needed to include weekends, evenings and Holiday's
  • Maintain order and discipline in the kitchen during working hours
  • Assist with proper receiving, inspecting, and storing of all food and supply orders
  • Create and maintain charcuterie boards, cheese platters, and charcuterie displays
  • Prepare dressings, vinaigrettes, sauces, and condiments for cold dishes
  • Pickle, ferment, and preserve vegetables and other ingredients
  • Prepare canapés and hors d'oeuvres for events and service
  • Maintain proper organization and cleanliness of the garde manger station
  • Monitor inventory levels and requisition supplies as needed
  • Ensure proper storage and rotation of all cold food items (FIFO method)
  • Maintain temperature logs and food safety documentation
About you
  • You have knowledge of all kitchen areas, including prep, pantry, and culinary method.
  • You have knowledge of wines, wine tastings and food wine pairings.
  • Preferred you have a minimum of 1 years' experience with the Californian Food Handler Card and/or Serve-Safe Certified
  • You have strong written and verbal communication skills.
  • You have the ability to work independently and under pressure
  • You are professional and have a positive attitude
  • You are able to lift up to 50lbs
  • 2-4 years of experience in a professional kitchen environment
  • Open to work weekends and Holidays.
