Position Overview
We are seeking a highly organized and detail-oriented Assembly Manager to oversee our assembly team responsible for building our meals. The ideal candidate will have a strong background in food production, exceptional leadership skills, and a deep understanding of culinary operations. You will be the vital link between the kitchen and the assembly line, ensuring seamless communication and maximizing production efficiency.
Key Responsibilities- Team Leadership and Management:
Oversee and manage a large assembly staff. Hold team members accountable for their performance, ensuring they are properly set up for success each shift. Work closely with line leaders to maximize production output and efficiency. - Production and System Alignment:
Build and maintain a robust assembly system that aligns perfectly with kitchen operations. Ensure seamless and continuous communication between the kitchen and the assembly team. - Quality and Portion Control:
Oversee the precise weighing of each meal component. Demonstrate a thorough understanding of cooked weights versus raw weights to ensure consistency and accuracy in every meal. - Waste Reduction:
Implement and enforce strict portion control and handling procedures to control food waste, aiming for near-zero waste. - Labeling and Compliance:
Ensure accurate dating and labeling for every single plate. Maintain strict adherence to all food safety and sanitation guidelines. - Operational Excellence:
Thrive in a fast-paced production line environment, managing operations during both day and night shifts.
- Experience:
Proven experience managing a large staff in a food production or culinary environment. A deep understanding of production line dynamics is an absolute must. - Food Knowledge:
Extensive food knowledge, particularly concerning cooked weights, portioning, and quality control. - Certifications:
Serv Safe certification and a strong understanding of sanitation standards are required. - Working Conditions:
Ability and willingness to work flexible hours, including both days and nights. Must be comfortable working in a cold room environment for extended periods. - Language
Skills:
Bilingual (English/Spanish) is a huge plus and highly preferred. - Communication:
Excellent interpersonal and communication skills to effectively bridge the gap between the kitchen and assembly teams.
