Smoke House Clerk at our Perrysburg, OH location.

The Smoke House Clerk reports to the Meat Manager and is responsible for the precise cutting and preparation of high-quality meats, including smoked and fresh store-made sausages, snack sticks, jerky, and solid muscle products. This role supports Smoke House production while delivering excellent customer service by assisting customers with selections, special requests, and product knowledge to ensure a high level of quality and satisfaction.
The Smoke House Clerk also assists with general Meat Department operations while maintaining strict food safety, sanitation, and quality standards.
SMOKEHOUSE CLERK
- Perform all duties and responsibilities that fall under Meat Clerk 1 and Meat Clerk 2
- Prepare various meats and meat products, keeping the Smoke House and fresh sausage cases fresh, full, and properly rotated
- Follow cut lists, control waste, and ensure accurate production levels
- Cut, weigh, smoke, wrap, vacuum package, and price Smoke House and fresh sausage products
- Safely and effectively operate equipment such as slicers, saws, grinders, knives, and vacuum packers
- Maintain advanced product knowledge of Meat, Smoke House, and fresh sausage items
- Maintain general sanitation practices, food safety practices, and food storage practices according to store and Health Department standards
- Learn and practice HACCP principles and work toward HACCP certification
- Assist with general Meat Department tasks, including but not limited to assisting customers at the meat counter, preparing burgers and marinades, and stocking products
- Take customer orders and special requests, fulfilling them to WCM quality standards
- Provide exceptional customer service by greeting customers promptly, answering questions, and assisting with product selection, pairings, and special requests
- Prepare, package, weigh, wrap, price, and merchandise Meat Department products
- Maintain advanced product knowledge of the Meat Department, including Smoke House and fresh sausage items
- Prepare and fulfill special orders in the absence of a Meat Cutter, Meat Team Lead, or Manager, as needed
- Assist in and support production of burgers, chicken, sausage, and Smoke House items
- Safely and effectively operate Meat Department equipment, including slicers, saws, grinders, knives, and vacuum packers
- Put away stock, properly date products, rotate inventory, and maintain organized stock areas in the cooler, freezer, and dry storage
- Maintain general sanitation, food safety, and food storage practices in accordance with store and Health Department standards
- Clean and maintain the department, including equipment, work surfaces, floors, and utensils
- Assist with training entry-level Meat Department employees, as needed

Requirements Required Skills & Abilities:- Ability to communicate clearly
- Comfortable working with the public and greeting, speaking with, and assisting customers
- Attention to detail, ensuring duties are completed correctly and on time
- Must be at least 18 years of age
- 1 year Meat Cutting experience, preferred
- Portion cutting experience, preferred
- High school diploma or equivalent combination of education and experience
- Prolonged periods of standing, walking, twisting, lifting, bending, and reaching
- Operating Meat equipment in a cool environment
- Occasional instances of pushing and pulling carts or pallets of product
- Must be able to frequently lift up to 50 pounds and occasionally up to 90 pounds
