The Director of Food & Beverage is responsible for the overall leadership, strategy, and performance of all food and beverage operations at Pinewild Country Club. This role oversees dining outlets, banquets, Member events, and beverage programs to ensure an exceptional Member and guest experience while achieving operational and financial goals.

The Director of Food & Beverage serves as a visible leader and culture builder, partnering closely with the Executive Chef and Club Leadership team to elevate service standards, enhance programming, drive Member engagement, and create memorable dining experiences. This position is responsible for developing high-performing teams, maintaining operational excellence, and ensuring the long-term success of the Club’s food and beverage offerings.

ESSENTIAL

DUTIES & RESPONSIBILITIES
  • Regularly walk dining rooms and function halls during meal service to interact with and develop rapport with Members and guests and to ensure quality and execution meet standards.
  • Provide direct leadership to front-of-house management teams and lead all food and beverage operations, including dining outlets, bars, banquets, catering, and Club events.
  • Take personal ownership of the Member experience, ensuring the operation is consistently "Member ready" in both appearance and service.
  • Maintain a strong, visible, and approachable presence throughout dining rooms and events, demonstrating professionalism, warmth, and strong interpersonal skills.
  • Develop and execute food and beverage strategies that enhance Member satisfaction, increase utilization, and support overall Club objectives.
  • Establish and maintain exceptional service standards while ensuring a consistent, high-quality Member and guest experience.
  • Partner with the Executive Chef on menu development, seasonal offerings, special events, and pricing strategies.
  • Develop, manage, and monitor departmental budgets, forecasts, labor plans, and financial performance metrics.
  • Analyze revenue, expenses, labor costs, and operational trends and implement corrective actions as necessary to achieve financial goals.
  • Oversee beverage programs, including wine, beer, spirits, cocktail offerings, and promotional initiatives.
  • Manage vendor relationships, purchasing programs, inventory controls, and cost-management efforts.
  • Recruit, train, coach, supervise, and develop food and beverage managers and staff while fostering a culture of accountability, teamwork, and hospitality.
  • Create and implement training programs focused on service excellence, product knowledge, Member engagement, and safety.
  • Partner with Club Leadership to support Member engagement, tournaments, weddings, private functions, and other special programming.
