Job Summary

The Portsmouth Marriott Hotel is looking for a Food & Beverage Manager to join the Food & Beverage team!

We are looking for an enthusiastic Food and Beverage Manager who is keen to grow inside the biggest hotel company in the world, Portsmouth Marriott Hotel. Located near famous landmarks such as the Spinnaker Tower has a range of amenities including:
Cast Iron Bar & Grill, our signature restaurant and fitness centre.

• Recruit, manage, train and develop the total Food and Beverage department
• Work within budgeted guidelines for payroll and consumables
• Drive sales to maximize budgeted revenue
• Ensure incentive plans are in place for team members to maximize sales and revenue
• Evaluate operational guest satisfaction, recognize success and action plan for continuous improvement
• Review monthly P&L statement for departments, identify opportunities cost saving
• Work with the Finance Manager to forecast monthly sales and costs
• Work closely with all departmental managers to ensure seamless guest experiences across the hotel
• Ensure operations meet the Brand Standard Requirements
• Comply with hotel security, fire regulations and all health and safety legislation

• Leads shifts and actively participate in the servicing of events.
• Has a strong leadership presence by being confident, fair, and able to motivate diverse teams while setting clear expectations and leading by example.
• Is calm under pressure by handling peak service times, guest complaints, and operational curveballs without panicking or losing focus.
• Has a Guest-first mindset by naturally being attentive, empathetic, and proactive in creating memorable guest experiences.
• Is an excellent communicator who is clear, approachable, and adaptable when working with staff, senior management, suppliers, and guests.
• Detail-oriented with big-picture thinking by keeping an eye on standards, costs, and compliance while understanding overall business goals.
• Is adaptable and solutions-focused and is flexible in a fast-paced environment and quick to find practical solutions when plans change.
