Are you a dynamic Food & Beverage executive with extensive casino-resort experience and a passion for leading large-scale operations?

Our client, one of the most recognized and fastest-growing hotel-casino resort destinations in Northern Nevada, is seeking a Vice President of Food & Beverage to oversee a diverse, high-volume operation generating $60M-$70M in annual revenue.

Position Overview

The Vice President of Food & Beverage will provide strategic and operational leadership for all food and beverage functions across the resort, including:

  • 6 bars and lounges
  • Banquet and catering operations
  • 200,000 square feet of meeting and event space

This executive will be responsible for driving operational excellence, guest satisfaction, financial performance, leadership development, and service standards across the entire division.

Key Responsibilities
  • Lead all Food & Beverage operations across the resort
  • Develop and execute annual business plans, budgets, and strategic initiatives
  • Manage P&L performance and monthly forecasting
  • Drive revenue growth, profitability, labor efficiency, and cost controls
  • Ensure exceptional guest experiences through service excellence programs
  • Develop, coach, and mentor Food & Beverage leadership teams
  • Establish and maintain training and development programs
  • Ensure compliance with all food safety, OSHA, Fire & Life Safety, and regulatory standards
  • Oversee audit compliance and operational accountability
  • Collaborate with executive leadership on resort-wide initiatives and long-term growth strategies
Qualifications/Required Experience
  • Bachelor's degree in Hospitality Management, Business Administration, or related field
  • Minimum 10 years of progressive Food & Beverage leadership experience within large casino, gaming, resort, or integrated hospitality environments
  • Experience overseeing operations with 8+ outlets and multiple revenue streams
  • Proven success managing high-volume Food & Beverage operations generating $60M-$70M+ annually
  • Strong expertise in financial management, forecasting, budgeting, labor management, and operational controls
  • Experience leading large management and hourly teams
  • Strong knowledge of food, beverage, banquet, catering, and stewarding operations
  • Experience implementing Food & Beverage systems and technology platforms
  • Excellent leadership, communication, and organizational skills

The property is currently undergoing a transformative $1 billion redevelopment, including a new 10,000-seat arena, an additional 800-room hotel tower, expanded entertainment offerings, and significant guest experience enhancements.
