The Role of the Oriental Sous ChefAs an Oriental Sous Chef, you play a key operational role within the culinary team, supporting the Executive Chef and Chef de Cuisine in delivering exceptional quality and authenticity in our Oriental and Arabic cuisine offerings. While this is not a senior management position, it carries significant responsibility in overseeing daily kitchen operations within the Oriental section and ensuring smooth and consistent service execution.
Your primary responsibility is to supervise and support the preparation of a wide range of traditional and contemporary Arabic dishes, ensuring the highest standards of taste, presentation, and authenticity are maintained at all times. This includes classic Middle Eastern specialties such as hot and cold mezze, grills, kababs, shawarma, mandi, kabsa, traditional rice dishes, Arabic breads, regional stews, and specialty sauces.
You will guide and assist Chef de Parties, Demi Chefs, and Commis Chefs within the Oriental section, ensuring efficient workflow, proper mise en place, and timely delivery during à la carte service, buffets, and banquet operations.
A deep understanding of Arabic spices, regional ingredients, traditional cooking techniques, and presentation styles is essential. You are expected to ensure consistency in flavor profiles while maintaining the refined standards of Four Seasons.
In addition to food production, you will:- Monitor portion control and minimize waste
- Support cost awareness within the Oriental section
- Ensure proper food storage and stock rotation
- Maintain strict hygiene and sanitation standards in compliance with HACCP and local regulations
You will collaborate closely with the broader culinary team during service periods, themed nights, Ramadan operations, and special events. Your leadership by example, strong communication skills, and ability to remain composed under pressure will contribute to a positive and productive kitchen environment.
Your culinary expertise in Arabic cuisine, attention to detail, and commitment to excellence will ensure that every dish reflects both authenticity and the luxury standards of Four Seasons.
