Leprino, a global leader in the dairy food and ingredient industry, is seeking a Cheese DMC Operator to join our team located in Roswell, NM. Leprino is the world's largest supplier of mozzarella cheese and one of the largest suppliers of premium dairy nutrition ingredients. Our customers and business partners span the globe and include many of the world's largest food companies, restaurant chains and distributors.
The DMC Operator operates the Draining and Matting Conveyor (DMC) equipment for curd pH development, moisture of cheese, and butterfat retention; maintaining a clean environment and adhering to all the GMP’s, SOP’s, and Critical Control Points pertaining to Food Safety and USDA regulations.

Starting compensation for this role typically ranges between $20.88 and $22.71 per hour. Additionally, a night shift premium of $1.25 per hour is added for hours worked between 6 PM and 6 AM.

Responsibilities- Monitor DMC belts and record data approximately every 20-30 minutes and make necessary adjustments if belts are out of balance. Check DMC sensors if belt is moved.
- Verify all pumps are running and every pipe is properly hooked up. Dicers, curd pumps, stirrer must be running so cheese will not stick.
- Obtain cheese samples every 10 minutes to check product specifications.
- Inspect DMC panels and adjust them as necessary.
- Properly clean and sanitize all equipment as required by company procedures, maintain good housekeeping in area.
- Maintain Good Manufacturing Practices at all times.
- Demonstrate good safety behaviors and constantly apply them by following all applicable safety rules and regulations.
- Perform Clean in Place (CIP) and apply proper chemical dosage to effectively clean all equipment.
- Communicate as required with Supervisors, Forepersons, other departments, and coworkers.
- Responsible for food safety and food quality.
- Perform other duties as assigned by Forepersons and Supervisors.
- Ability to work in an environment that is higher in ambient temperature and humidity.
- Ability to work safely around chemicals.
- Candidate must possess good communication skills.
- Have the ability to work efficiently with minimal supervision.
Salary: $20.88 - $22.71 per hour (night shift premium $1.25 per hour). Minimum Qualifications- Ability to perform essential job functions safely.
- Must be a minimum of 18 years old.
- Must be able to work Sunday to Saturday, off shifts, weekends, holidays, and required overtime to support a 24/7 operation.
- Must be able to work a minimum of 8.5 hours per shift.
- Demonstrated ability to complete work assignments with a high degree of accuracy.
- Good communication skills.
- Able to read, write, and speak English.
- Able to read, write, and perform intermediate mathematical calculations.
- Must maintain accurate records.
- Good time management skills.
- Ability to work independently without direct supervision.
- Able to interpret data and make necessary decisions.
- Exposed to ambient temperatures; may include a wet/slippery environment with loud noise in varying degrees of temperature.
- Specific vision may be required: close vision, distance vision, color and depth perception, ability to read computer screens for extended periods.
- Must be able to lift and carry up to 50 pounds.
- Bending, squatting, reaching, and climbing stairs/ladders required throughout the shift.
- Standing and walking required throughout the shift.
