Leprino, a global leader in the dairy food and ingredient industry, is seeking a Cheese Extruder Operator for our Roswell, NM location. The operator maintains constant ingredient levels, ensures a clean environment, and follows GMP, SOP, and USDA regulations. The role requires communication across departments, computer adjustments to CIP processes, and data entry of pH levels, ribbon dimensions, and weights. CIP (Clean in Place) operations and proper chemical dosing are essential for equipment sanitation.

This position is crucial to maintaining food safety and quality.

• Inspect and adjust ingredient quantities, monitoring salt, powder, and modifier levels hourly.
• Check ribbon thickness, moisture and temperature, and apply necessary adjustments.
• Obtain and record cheese temperature, pH levels, and salt set points.
• Inspect all equipment involved in the process, including mixers, tanks, extruders, and slurry lines.
• Clean and sanitize equipment according to procedures, maintaining good housekeeping.
• Adhere to Good Manufacturing Practices at all times.
• Follow safety rules and regulations, demonstrating safe behaviors consistently.
• Communicate with supervisors, forepersons, other departments, and coworkers as required.
• Ensure food safety and food quality responsibilities are met.
• Perform other duties assigned by forepersons and supervisors.
• Work effectively in high ambient temperatures and humid conditions.
• Operate safely around chemicals.
• Work efficiently with minimal supervision.

• Minimum age 18, ability to work Sunday through Saturday, including off-shifts, weekends, holidays, and required overtime for 24/7 operation.
• Ability to work a minimum of 8.5 hours per shift.
• Execute job functions safely and accurately.
• Good communication skills and proficiency in reading, writing, and speaking English.
• Intermediate mathematical calculation competency.
• Maintain accurate records and interpret data for decisions.
• Time‑management skills and independent work capability.

Starting pay ranges from $22.28 to $24.42 per hour. A night shift premium of $1.25 per hour applies for hours worked between 6 PM and 6 AM.
