Position Title
Corrections Food Service Coordinator (Portland) – Temporary (6-month appointment)
Salary$5,233 – $6,271 per month for non-PERS applicants; PERS qualifying applicants may have an adjusted range.
Responsibilities- Coordinate, assign, and supervise AIC work crews; enforce rules, procedures, and security; provide training, evaluate performance, maintain discipline, cleanliness, conduct contraband searches, and monitor timecards and work area conditions.
- Lead AICs in preparing and cooking meals per menus and recipes; operate commercial kitchen equipment; ensure proper portioning and quality; assist with special diets; plan cooking schedules; minimize food waste.
- Oversee kitchen cleanliness and hygiene; ensure proper food storage, equipment sanitation; manage dishwashing temperatures and supply rotation.
- Perform inventory checks; request supplies; verify deliveries; assist with food ordering; direct unloading and storage of supplies.
- Maintain records on food prepared and served, leftover quantities, inventory, and AIC work hours.

Requested Skills- Team/crew management of up to 40 or more individuals.
- Experience managing, supervising, or leading a kitchen (restaurant, school cafeteria, military dining, government, or private food establishment).
- Demonstrated experience cooking a variety of foods.
- Knowledge of progressive cooking, food waste minimization, and cooking from cook-ready to serve.
- Knowledge of food temperature safety zones.
- Ability to instruct work crews in proper sanitation procedures.
- Maintaining order while fostering a positive work environment.
- Serv Safe Food Protection Manager Certificate.
High noise levels and extreme temperature variations; constant standing, walking, stooping, bending, reaching, and lifting; wet and slippery floors; daily contact with adults in custody; potential for hostile or abusive behavior; requires supervision of AICs to prevent escapes and manage contraband; requires reporting incidents and maintaining food safety information.
