All About the Sushi Line
Cannonball's sushi program is an essential part of our dining experience, combining precision, freshness, and consistency in a fast-paced, high-volume kitchen. From classic rolls to beautifully prepared nigiri and sashimi, our sushi offerings reflect Cannonball's commitment to quality and execution. Sushi Line Cooks play a critical role in ensuring every plate meets recipe standards, presentation expectations, and food safety requirements.
Your Role on the Sushi Line
As a Sushi Line Cook at Cannonball, you are responsible for the consistent preparation and execution of sushi menu items during service. You will focus on station readiness, knife work, portioning, and quality control while working efficiently behind the line. You will follow established recipes and food safety standards while collaborating closely with kitchen leadership and teammates to support smooth service and successful events.
Responsibilities- Sushi Preparation and Station Execution:
Prepare sushi menu items including rolls, nigiri, sashimi, and designated side items in accordance with established recipes and portion standards - Execute sushi production efficiently during high-volume service while maintaining consistency and presentation
- Perform knife work including cutting, slicing, and portioning raw fish and ingredients according to station requirements
- Maintain station readiness throughout service by ensuring tools, equipment, and prepared ingredients are properly stocked and organized
- Food Safety, Hygiene, and Sanitation:
Follow all Department of Health (DOH), food safety, and sanitation guidelines at all times - Clean and sanitize knives, utensils, tools, and equipment before use and as required throughout the shift
- Maintain a clean, organized workstation to prevent cross-contamination
- Properly store, label, rotate, and handle raw fish and ingredients in compliance with food safety standards
- Ingredient Quality and Inventory Support:
Inspect fish, seafood, produce, and other ingredients prior to preparation to ensure quality standards are met - Notify kitchen leadership promptly if ingredients do not meet quality expectations
- Assist with monitoring food stock levels and participating in routine inventory counts
- Replenish sushi service lines as needed to support continuous service
- Restock and reset the workstation to prepare for the next shift
- Service and Event Support:
Coordinate with kitchen leadership to support smooth service flow during regular operations - Assist with special dinners or events that may require limited guest-facing sushi preparation when assigned
- Follow allergy information and special requests as communicated by kitchen leadership
- Professional Conduct and Teamwork:
Work collaboratively with cooks, dishwashers, and kitchen leadership to support efficient kitchen operations - Follow direction from the Chef de Cuisine, Sous Chef, and Kitchen Leads
- Maintain composure, focus, and efficiency during peak business periods
- Follow all company policies, grooming standards, and kitchen procedures
- Perform other duties as assigned and as trained to support kitchen operations
- Detail oriented and committed to consistency, quality, and presentation
- Comfortable working in a fast-paced, high-volume kitchen environment
- Confident performing knife work, preparation, and station execution
- Safety minded with a strong understanding of food safety, sanitation, and hygiene standards, or eager to learn and follow them precisely
- Able to stay calm, focused, and efficient during busy service periods
- A team player who communicates clearly and works well with kitchen teammates and leadership
- Reliable, responsible, and committed to maintaining high culinary standards every shift
