The Commissary Kitchen produces thousands of meals, salads, sides and sweets every week. We believe the best way to work and grow together is as a team. No one is above washing dishes, but we also encourage cross-training and skills development at all levels of the kitchen. - Oversee daily production of pastries, cakes, and desserts. Manage inventory, order ingredients, and ensure product quality and consistency.
- Focus on executing high-quality, appealing, and, in some cases, seasonal or artisan, pastries and desserts.
- Label and date all products prepared
- Prepare, clean, and organize ingredients for use in the kitchen
- Completing all tasks, in order, as advised by the Chef or other kitchen manager, within the necessary time window
- Package all Pastry products for retail locations
- Assist in planning the menu of desserts and pastry to complement savory items
- Ensure food safety standards and a high standard of cleanliness are being met in the kitchen at all times. Maintain a clean work-station mindset - your station is your house!
- Efficiency, ease, and the ability to navigate throughout the kitchen Maintain up-to-date knowledge about pastry arts and ingredients
- Know the correct mixing order. Must be accurate in mixing, dividing, shaping, proofing, and baking to ensure consistency in daily production.
- Mix doughs correctly and weigh/measure accurately using scales.
- Understand and follow all recipes and instructions. Know the location of all ingredients.
- Follow the production schedule provided by the Chefs
- This person will partner with the Chefs in all of the duties in the Pastry Department to achieve the department's sales and profit goals

RequiredEducation and Experience
- 2+ years of professional baking experience
- Knowledge of food safety (Food Handler's Permit), ability to read/scale recipes, and expertise in decorating or baking techniques
- Proven experience working in pastry production in a fast-paced kitchen environment
