The Hospitality segment will lead the Hospitality Strategy and business objectives for Sun International, providing thought leadership and advice on measuring product performance, revenue growth, operational governance and service standard, as well as building strategic relationships and partnerships with key stakeholders; and leading the integration of group-wide projects into operations.
The F&B Specialist will be responsible for providing analysis and due diligence around the cost and business value of F&B projects and services across business operations including providing F&B asset management services, controlling and monitoring of licenses, conducting spend and revenue analyses. The role will develop and maintain a comprehensive financial, and administration control and governance framework for food and beverage to support business operations in optimising efficiencies and promoting revenue growth and profitability.
This will include developing controls to monitor stock, staffing levels and productivities; monitoring pricing; sourcing of solution components; recording of approvals, and agreements; monitoring the profitability of existing restaurants and conferencing offerings, and negotiating partnerships with key suppliers.
The incumbent be responsible for:
- Analyse and track food and beverage targets, budgets, and revenues across Sun International’s South African F&B business operations
- Produce monthly F&B management reports including analysing and monitoring F&B cost of sales, stock holding and turnover, labour efficiencies, and stock losses across operations
- Monitor rostering and productivity ratios for all outlets, providing detailed F&B insights and analysis
- Diagnose and identify potential problems and challenges with the current way in which control processes and procedures support functional objectives and provide recommendations where issues exist
- Facilitate the design, development and testing of solutions and tools that will provide business intelligence for improvement of business processes and growth within the F&B business operations
- Work with the F&B Services Manager to develop F&B SOPs for front and back of house areas and ensure they are embedded in the operations
- Perform feasibility and due diligence studies to investigate new projects; solutions and services
- Present results, F&B product performance and statistics including recommendations for future controls and revenue optimisation
- Optimise recurring operational expenses in order to deliver maximum value and reduce expenditure
- Analyse business intelligence data of market segmentation and oversee the creation of a "value proposition" and product-price positioning plan based on that segment's unique customer needs and characteristics
- Provide functional system support to the business on inventory control system & menu management; part maintenance with respect to F&B systems (Micros & IFS)
- Is an advisor to business operations with regards product and standards enhancement across the food and beverage operations in line with leading practice, trends and innovation
- Coach F&B teams within business operations around business and system requirements to allow to effectively and efficiently produce results
- Monitor relationship agreements with key suppliers, business partners and sponsors to achieve the business objectives and leverage new opportunities and joint initiatives
- Monitor the development, availability and auditing of governance standards, processes and tools for food and beverage and data management based on leading practice and new legislative compliance around FCS, CPA, POPI, and other legislation – ensuring they are updated and communicated
- Provide consultative support in the planning and execution of controls and revenue enhancing initiatives within food and beverage operations
