Job Summary

The Sanitation Technician is responsible for cleaning and sanitizing all production areas, equipment, and food-contact surfaces in the smoked salmon processing facility. This role is critical in ensuring compliance with food safety regulations, preventing contamination, and maintaining a safe and hygienic environment for seafood production.

Key Responsibilities
  • Clean and sanitize processing equipment (smokers, slicers, vacuum packers, conveyors, brining tanks).
  • Perform daily sanitation of floors, walls, drains, ceilings, and work surfaces.
  • Disassemble and reassemble equipment for deep cleaning.
  • Use approved chemicals and sanitizers according to SOPs.
  • Monitor and record sanitation activities in log sheets.
  • Follow SSOPs (Sanitation Standard Operating Procedures).
  • Identify and report any contamination risks, pest activity, or equipment issues.
  • Support pre-operational inspections with QA team.
  • Maintain proper chemical storage and labeling.
  • Adhere to GMPs (Good Manufacturing Practices), HACCP, and food safety policies.
  • Wear required PPE and follow safety protocols at all times.
Required Qualifications
  • High school diploma or equivalent (preferred).
  • Previous sanitation or food processing experience preferred (seafood experience a plus).
  • Ability to work in cold, wet environments.
  • Ability to lift 40–50 lbs and stand for extended periods.
  • Comfortable using chemicals and cleaning equipment.
  • Basic understanding of food safety and hygiene practices.
  • Ability to follow written and verbal instructions.
Preferred Skills
  • Experience in seafood or smoked fish facilities.
  • Knowledge of HACCP, SSOP, GMP, and FDA/USDA food safety standards.
  • Attention to detail and strong work ethic.
  • Ability to work independently and as part of a team.
