Lescombes Family Vineyards is the premier vineyard and winery in the state of New Mexico. Since 1981, we have been leading the industry with an array of wines to include traditional, hand-crafted releases and highly-acclaimed, award-winning favorites. Our current locations consist of our bistro locations:
Albuquerque Cottonwood, Albuquerque Old Town, Alamogordo, and Las Cruces;
Hervé Wine Bar in Santa Fi; and a tasting room adjacent to the winery in Deming. Our family-owned vineyard thrives just east of Lordsburg and consists of a 240‑acre property. $80,000 – $100,000 annually (total compensation potential). Range includes base salary plus potential monthly performance bonuses based on store profitability and operational performance metrics.
Key Responsibilities- Oversee daily restaurant operations, ensuring excellence in service and hospitality
- Maintain and elevate fine dining service standards
- Lead, coach, and develop front and back‑of‑house leadership teams
- Manage full P&L, labor controls, inventory, and cost management
- Drive revenue growth through strategic planning and community engagement
- Ensure compliance with all New Mexico labor laws, health regulations, and alcohol service requirements
- Oversee wine program execution in collaboration with leadership and supporting roles.
- Foster a positive, accountable, and high‑performance culture
- Minimum 5+ years of high‑level restaurant management experience
- Fine dining experience required
- Demonstrated success managing full P&L and driving profitability
- Strong leadership, team development, and communication skills
- Extensive knowledge of wine service and upscale hospitality standards
- Experience in luxury or destination markets preferred
- Ability to work evenings, weekends, and holidays as required
