• Locate appropriate meat portions in the walk‑in freezer/refrigerator, remove the pieces, and transport them to the cutting room.
• Use knives and occasional band saw to prepare specific cuts of meat from larger portions.
• Set machine for proper pricing; label and wrap meat for display.
• Arrange packages on display and remove out‑of‑date or damaged items.
• Clean and sanitize work areas, equipment, tools, counters, and floor surfaces.
• Operate an electric tow motor to move pallets from the receiving area to storage areas.
• Instruct, supervise, and direct Apprentice Meat Cutters as required.
• Perform other duties as assigned.

• Comprehend and follow specific instructions.
• Perform simple and repetitive tasks.
• Maintain appropriate work pace for a given workload.
• Knowledge of meat (including primal cuts), poultry, fish, and pre‑packaged products.
• Adapt to seasonal or holiday product needs.
• Understand trends in cooking and recipes that affect demand.
• Apply department food safety and hazardous materials rules and regulations.
• Use and care of professional cutlery, saws, tenderizers, grinders, wrapping equipment, and other tools.

High School Diploma (or G.E.D.) or additional relevant job experience.

Prior Meat Department experience, including cutting meat.

Availability to work a variety of required retail hours; ability to operate department equipment (grinder, pallet jacks, saws, scales, register, etc.).

Store environment: ability to sit, stand, walk, kneel, stoop, use stairs, reach, pull, and lift objects; requires lifting up to 50 lbs.
