Purpose

of Position

The Pastry Lead Line Cook works under the direction of the Executive Pastry Chef to oversee daily pastry operations, ensuring the preparation and presentation of pastries, breads, and desserts meet established recipes, quality standards, and brand expectations. This role supports kitchen leadership by guiding and assisting pastry team members while maintaining a collaborative and professional work environment.

Responsibilities
  • Oversee daily pastry operations and ensure pastries, breads, and desserts meet established recipes, quality standards, and brand expectations.
  • Support kitchen leadership by guiding and assisting pastry team members while maintaining a collaborative and professional work environment.
Education
  • Technical or Trade School Degree in Baking & Pastry or related field
  • Valid Washington State Food Handler’s Permit
Experience
  • Minimum 2–4 years of pastry experience, preferably in a hotel or high-end restaurant environment
  • Strong knowledge of advanced pastry techniques, bread production, cake decoration, and dessert presentation
Skills & Qualifications
  • Ability to lead by example in a fast-paced, high-volume environment
  • Strong organizational and time-management skills with attention to detail
  • Ability to manage multiple tasks while maintaining quality and consistency
  • Flexible and adaptable, maintaining professionalism under changing conditions
  • Creative, innovative, and passionate about pastry arts
  • Results-oriented and able to perform well under pressure
  • Team-focused mindset with a willingness to support and motivate others
  • Ability to work independently while partnering effectively with kitchen leadership
  • Excellent interpersonal, verbal, and written communication skills
  • Ability to work a flexible schedule including weekends, holidays, AM/PM shifts, and overtime as needed
