The Overnight Production Baker role prepares, bakes, stocks, rotates, and maintains inventory for a wide variety of bread, rolls, pastries, cakes, and specialty items during the overnight hours.

The ideal candidate has a passion for baking, strong time management, and knowledge of bakery production methods and food safety practices.

• Prepare and bake fresh bread, rolls, pastries, and other baked goods using recipes and formulas provided by the bakery department.
• Accurately measure, mix, cook, and package products according to established recipes to ensure quality and consistency.
• Assist with production to meet demand forecasts and adjust production runs as needed to satisfy customer and retail needs.
• Maintain proper inventory levels and order supplies to prevent shortages.
• Follow the nightly production schedule to stock shelves with fresh product by store opening; prioritize tasks with minimal supervision.
• Ensure baked goods meet Lee’s Marketplace standards for appearance, texture, and taste; label items for display or packaging.
• Monitor batch consistency, baking times, temperatures, and product output for quality.
• Maintain a clean, sanitary, and organized workstation; follow food safety, allergen, and sanitation guidelines, including proper storage and equipment cleaning.
• Monitor inventory, minimize waste, and report low stock or inconsistencies to the Bakery Manager.
• Process and complete orders through digital and written order systems.
• Other responsibilities as needed.

• Greet and assist guests and team members in a friendly and courteous manner.
• Provide knowledgeable answers to inquiries from guests and team members.
• Promote high morale within the department and store through professional communication with guests and team members.
• Demonstrate strong problem-solving skills and a commitment to the Lee’s Way: doing what’s best for guests, team, and company.
• Assist customers with use of the Lee’s Marketplace website as needed.

• Ensure product freshness by monitoring quality, rotating stock, and checking expiration dates.
• Store perishable items at correct temperatures and keep dry ingredients in suitable conditions.
• Maintain accurate inventory of production supplies and ingredients using FIFO to reduce waste.
• Follow recipes accurately to maintain product consistency and quality.
• Package bakery goods properly to maintain freshness and comply with safety regulations; label with pricing, ingredients, allergen information, and expiration dates.
• Minimize waste by tracking production quantities and disposing of or recycling waste per store policies.

• Maintain a clean and organized work area; follow safety and sanitation procedures.
• Store products containing dairy or other perishables at proper temperatures to prevent spoilage.
• Practice proper hygiene, including hand washing, gloves, and sanitation of equipment.
• Label and handle products with common allergens to prevent cross-contamination.
• Report safety hazards or equipment issues to the Store Director and document injuries or safety concerns promptly.
• Adhere to all food safety and sanitation regulations; contribute to department cleaning responsibilities.

• Collaborate with team members to achieve store goals; promote teamwork and guest service aligned with the Lee’s Marketplace Mission and Core Values.
• Participate in team meetings and training; assist other departments as needed.
• Work in a fast-paced environment with tact and patience; ensure products are sold before expiration.
• Attend departmental, store, and company meetings as required; support policies, procedures, and a harassment-free environment; provide timely feedback and coaching for professional growth.
