Monday
- Friday 6:00 am - 2:30 pm (OT). Stock Yards Facility.
- Prepare high quality cuts of meats according to customer specifications using company standards and adhering to all safety requirements.
- Trim fat and skin from meat and customize portions of products using knives or other meat production equipment.
- Count and stack portions on trays per customer and company specifications.
- Label portions with supplied number product labels.
- Set up cutting room as required.
- Keep cutting room and surrounding area clean and sanitized.
- Follow company GMP (Good Manufacturing Practices) to maintain sanitary conditions.
- Work standing continually in a refrigerated environment 35°F-45°F.
- Other duties as assigned by Manager.
The incumbent is not required to provide direct supervision of any position.

Work continually in refrigerated environment 35°F-45°F. Must be able to work for periods of time in freezer 10°F to
-10°F degrees.
- Kitchen prep experience and basic knife skills preferred; minimum of 6 months experience as a trimmer preferred.
- Experience with laser portion machinery or other meat production equipment preferred.
- Minimum six months in production, manufacturing or meat trimming experience required.
- Knowledge of poultry, beef, lamb, and pork products.
- Knowledge of USDA grades and standards.
Stands continuously, walks occasionally, drives vehicle not applicable, sits occasionally. Lifts 1-10 lbs occasionally, 11-20 lbs occasionally, 21-50 lbs frequently, 51-100 lbs occasionally. Various manual tasks such as push/pull, climb/balance, stoop/squat, kneel, bend, reach above shoulder, twist, grasp objects, manipulate objects, and manual dexterity performed frequently.
OCCASIONALLY: 1% - 33% of work time; FREQUENTLY: 34% - 66%; CONTINUOUSLY: 67% - 100% or never.
COMPENSATIONCompensation depends on relevant experience and/or education, specific skills, function, geographic location, and other factors as applicable by law. The expected base rate for this role is between $23.00 and $24.00 per hour. Overtime compensation may be received as applicable.
