What You’ll Do

As a Sushi Cook, you’ll prepare and assemble fresh sushi products in our shared production facility. You’ll work with both automated and manual sushi-making equipment to help deliver consistent, high-quality products every day.

Responsibilities include
  • Preparing sushi rice, seafood, and vegetables following Hissho’s standardized recipes.
  • Ensure all required logbooks, including rice pH log and temperature logs, are maintained and verified
  • Rolling and cutting sushi using Suzumo automated machines.
  • Following batch sheets and production targets for accuracy and efficiency.
  • Packaging and labeling finished trays using BOHA terminals.
  • Maintaining strict food safety and sanitation standards (HACCP/GMP).
  • Assisting with daily setup, cleaning, and equipment sanitation.
  • Supporting continuous improvement and process consistency across the team.
Requirements
  • 1+ year experience in high volume sushi production (restaurant or manufacturing).
  • Basic understanding of food safety and sanitation.
  • Comfortable working evenings or overnight shifts.
  • Able to lift up to 50 lbs and stand for long periods.
  • Serv Safe certification (or willingness to obtain).
  • Ability to effectively communicate in English.
Preferred
  • Experience using Suzumo or similar sushi rolling/cutting machines.
  • Familiarity with ready-to-eat (RTE) food manufacturing.
  • Knowledge of BOHA labeling systems.
  • Missouri Seafood HACCP certification
