About The Job

Based at the Mandarin Oriental Palace, Luzern, within the Culinary department, the Chef de Partie Patisserie is responsible for assisting the Executive Pastry Chef and the Pastry Chef to supervise and run all sections of the pastry kitchen that they have been assigned to. The Chef de Partie reports to the Executive Pastry Chef.

As Chef de Partie Patisserie, you will be responsible for the following duties:
  • Ensuring all pastry items are prepared and presented in accordance with the hotel’s luxury quality and presentation standards
  • Managing daily mise en place to guarantee smooth and efficient pâtisserie operations
  • Producing high‑quality pastry items for à la carte service and the banqueting department
  • Actively contributing to menu creation and the development of innovative dessert concepts
  • Coordinating orders with the supervisor and overseeing daily goods receiving and quality control
  • Full compliance with all operational guidelines and proper storage of food and raw materials
  • Maintaining seamless workflows while consistently upholding the highest quality standards
  • Ensuring daily compliance with hygiene, cleanliness, and food safety regulations in accordance with HACCP guidelines
Expectations From You
  • Completed vocational training as a Pastry Chef or Cook, with several years of professional experience in a high‑end pâtisserie environment.
  • Strong team spirit combined with natural leadership qualities.
  • Excellent organizational and time‑management skills.
  • Creativity – your culinary handwriting is reflected in cooperation with our Executive Pastry Chef.
  • Very good knowledge of German and English. Additional foreign language skills are an advantage.
